Oatmeal Chocolate Chip Peanut Butter Bars

Ingredients

Bars

  • 1/2 c. butter, softened
  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 1/2 c. creamy peanut butter
  • 1 egg, beaten
  • 1 t. vanilla
  • 1 c. flour
  • 1/2 c. quick-cooking oats
  • 1 t. baking soda
  • 1/4 t. salt
  • 1 c. (6 oz.) semisweet chocolate

Icing

  • 1/2 c. confectioner's sugar
  • 2 T. creamy peanut butter
  • 2 T. milk

 

Directions

  1. Pre-heat the oven to 350°F.
  2. In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla.
  3. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well.
  4. Spread into a greased 13-in. x 9-in. baking pan. Sprinkle with chocolate chips.
  5. Bake for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes.
  6. Combine icing ingredients; drizzle over the top.
  7. Cool completely. Cut into bars.
